Jackfruit has gained in popularity recently, but for many people, it remains a mystery on how to cook it and what it tastes like. Jackfruit has a shredded meat texture, so it's perfect for layering on a taco with your favorite toppings, plus it's more vitamin-rich than processed meats. Like our microgreens, it contains vitamins like A, C, iron, zinc and fiber. Together, these nutrients help manage blood sugar and a healthy heart, so pairing these two superfoods was a no brainer!



We may be biased here (wink wink), but we feel the biggest nutritional come-up for your tacos is our Micro Cilantro. Why? Because although we love cilantro in general and appreciate its flavor, it has a stronger flavor profile than our micro-version. It needs a heavy cleaning and most times, the stems are thrown away (such a shame!) Our Micro Cilantro is pre-rinsed and needs just a light rinse and pat before using. The whole plant consists mainly of leaves, so you can use it all with no waste. And it is famously known for its crisp refreshing flavor, not the musty, soapy flavor that some people pick up from full-grown cilantro. (We still love you, cilantro!)



Aren't these tacos beautiful? We used a low-carb flour tortilla, but you can choose white or yellow corn tortillas. It's easy and fun to grill them lightly then shape them using this fun and trendy taco-shaper. Feeding a large crowd? This economical meal allows everyone to build the taco they want while you get all the props for offering such a delicious and secretly-healthy meal!

Start Here:

Jackfruit Mixture

2 20-oz. cans green jackfruit in brine, strained

taco seasoning packet - choose a healthy one, like Siete!

1 tsp. garlic powder

1 tsp. chili powder

2 tsps. dried oregano

2 cups vegetable stock

1-2 tbsp. olive oil

2 tbsp. tomato paste

Salt &Pepper

fresh lime

soy sauce or coconut aminos, to taste

 

METHOD:

  1. Choose a large skillet and heat to medium with a drop of olive oil.

  2. Start with tomato paste and vegetable stock and heat until consistency is smooth.

  3. Season with garlic powder, chili powder, taco seasoning packet and oregano flakes.

  4. Strain each can of jackfruit and add to skillet. You can chop the jackfruit in advance or put it in fairly whole, then use a wooden spatula to chop up pieces. The more the jackfruit heats up, the softer and more pliable it becomes.

  5. Continue to mix until well blended. Add soy sauce or coconut aminos, to taste. Squeeze as much lime as you like and blend.

Next, prep your taco shells:

Flour tortillas can be too large, but we found these small low-carb flour tortillas by. You can also choose white or yellow corn tortilla; either type can be baked and molded into taco shape. If you have the cute taco holders, make use of them here! They keep things together and are perfect for serving a crowd!

  1. Preheat oven to 350 degrees.

  2. Fold tortilla in half in the shape of a taco - or use metal oven-safe taco holders to create the right shape. Bake for ten minutes or until golden brown.

There are no exact measurements for these ingredients because Tacos are all about choosing what you love the best. So gather enough ingredients for your crowd and place in matching bowls, creating a taco bar of sorts. Let your family and friends decide what goes in the taco shell!
