Impossible™ Tostada Bowls with Micro Cilantro

Tacos have basically taken over the world and most people couldn't be happier. But today, we're putting a fresh, healthy spin on the overlooked Tostada and doing it with our fresh Micro Cilantro and another healthy ingredient in the world of plant-based foods: Impossible™ Burger!

Impossible Foods has made it SO easy for us to eat healthier while simultaneously saving our planet. Tried and true, their products are 100% made from plants and taste just like ground beef, if you ask us. Their Impossible Burger is easy to cook and can sub-in for other proteins. Check out their recipes that show how creative you can be in the kitchen with their product.

We made our own taco seasoning from scratch! Check out the ingredients below...

For the main ingredients, we chose some traditional items, like jalapenos, Mexican crema, avocado, queso fresco blanco and fresh salsa. If you have trouble finding ingredients, visit your local Mexican market or check out the links provided below. Building your own tostada bowl simple; just load it with the things you love most, then savor every bite!

Finally, no BrightFresh recipe is complete without some fresh and tasty microgreens, so naturally, we've included our fragrant Micro Cilantro. We can't decide if it tastes better or smells better (what a good problem to have).

For our keto conscious friends, this recipe is indeed KETO-friendly!

Servings: 6 bowls


  • Avocado oil

  • ½ medium onion, finely chopped

  • 4 tbsp. taco seasoning*

  • 2 12-oz. pkgs of Impossible™ Burger made from plants

  • ¼ cup black olives, diced

  • 4-6 Tostada bowls (you can find any brand you prefer)

  • 1-2 avocados, sliced

  • Mexican crema (or sour cream)

  • Queso fresco blanco (or crumbly feta)

  • Fresh salsa (we love La Salsa Chilena)

  • 1-2 jalapenos, diced

  • Limes for squeezing on top

  • BrightFresh Micro Cilantro

*For homemade taco seasoning, combine the following spices:

1 ½ tbsp. chili powder

2-3 tsp. cumin

2 tsp. paprika

1 ½ tsp. oregano

½ tsp. each of garlic powder, dried onion, ground black pepper, chipotle powder

Salt, to taste


  1. Mix your taco seasoning ingredients and whisk in a bowl. Set aside.

  2. Heat oil in a skillet over medium heat. Add the diced onion and sauté until onions caramelize, about 7-10 minutes. Set onions aside.

  3. Add another tbsp. of avocado oil to pan and add in your taco seasoning mix. Stir to let spices bloom.

  4. Add in the Impossible™ Burger ground meat and continue cooking. You can add 1-2 tsp. of water if mixture gets dry.

  5. Fold in the diced onions and olives and stir for 2-3 more minutes.

  6. Gather your side toppings and create a taco bar with each topping: Mexican crema, queso fresco blanco, salsa fresca, jalapenos, Micro Cilantro, cut limes, etc.

  7. Plate each tostada bowl and begin assembling your meat and toppings.

  8. Complete your bowl with some Micro Cilantro microgreens and a fresh squeeze of lime.
