Honey Adobo Shrimp Tacos and Micro Cilantro

Busy weeknights need a no-fuss solution to dinner without sacrificing flavor and the satisfaction of chomping down into a juicy and savory taco! These flavorful tacos teeter between sweet honey and chipotle spice, as you create fresh and tangy ingredients and then decide how much of each to pile onto your signature taco. We promise, the massaged onions, adobo chili sauce, plus our Micro Cilantro Microgreens will not disappoint!
2 Tbsp. adobo sauce from 1 can chipotle chiles in adobo
2 Tbsp. honey
1 lb. medium shrimp, peeled, deveined and tails-off
½ cup mayonnaise
1 small garlic clove
¼ head of green cabbage
1 small red onion
8 corn tortillas
2 Tbsp. vegetable oil
1 avocado, thinly sliced

Stir 2 tbsp. adobo sauce and 2 tbsp. hot water in medium bowl until combined and add in 1 lb. shrimp; season with salt. Mix in the shrimp until evenly coated with sauce then set it aside to marinate while you prep your toppings.
Crema sauce: Mix ½ cup mayonnaise with 2 Tbsp. water in a small bowl. Grate 1 garlic clove into bowl, season with salt and stir to combine. Mix very well!
Thinly slice ¼ head of cabbage into very thin strips. Place in side bowl.
Massaged red onions: Peel and trim 1 red onion. Cross-cut into small pieces. Place in a small bowl. Squeeze the juice from 1 lime onto the onions. Add a pinch of salt. Using your hands, massage the onions until they are fully coated in lime juice mixture.
Set your Micro Cilantro next to the other toppings!
Warm your tortillas in a skillet until pliable and starts to golden, 45-60 seconds per side. Transfer tortillas to a piece of foil or tortilla warmer to keep warm.
Cook shrimp: Return skillet to medium-high heat and pour in 2 tbsp. oil. Once oil begins to shimmer, add shrimp. Cook until shrimps turn pink (1–2 minutes), the flip and grill the other side. Remove skillet from heat.
