Mediterranean Salad 🥗



Recipe:⁠

●       1 can of chickpeas

●       1 English cucumber

●       ¼ cup red onion

●       1 bell pepper

●       1 cup cherry tomatoes

●       ½ cup sliced olives

●       ½ cup feta cheese (crumbled)

●       ¼ cup BrightFresh Micro Cilantro

●       Balsamic Vinegar/vinaigrette


Instructions:⁠

1. Slice your English cucumber, red onion, pepper and cherry tomatoes

2. Mix in all the ingredients

3. Pour in your dressing

4. Mix well and enjoy!


Cobb Sandwich 🥪



Recipe:⁠

● 1 roll/baguette

● deli/turkey slices

● 3 hard boiled eggs

● Bright fresh Micro Rainbow Mix

● 1 tbsp mayo

● 2 tbsp dressing of choice

● ½ cup crumbled cheese

● ½ cup cherry tomatoes

Instructions:⁠

1. Slice the bread in half

2. Spread your dressing on top

3. Place a handful of BrightFresh Micro Rainbow mix on top

4. Place your deli/turkey slices

5. Chop up your eggs and mix with mayo

6. Place a spoonful on top

7. Crumble some cheese on top

8. Top it with chopped tomatoes

9. Place the other half of the bread on top

10. Cut the sandwich and enjoy!


Caprese Zoodles 🍅



Recipe:

● 2 cups zoodles

● 1 cup cherry tomatoes

● ½ cup mozzarella balls/cubes

● ¼ cup BrightFresh Micro Cilantro

● 1 tbsp balsamic vinegar

● 1 tbsp olive oil

● Salt + pepper


Instructions:⁠

1. Layer your zoodles with chopped cherry tomatoes and mozzarella

2. Top it with your BrightFresh Micro Cilantro

3. Drizzle your balsamic vinegar and olive oil on top

4. Mix in your salt and pepper

5. Mix and enjoy!


Black Bean & Corn Salad 🫘🌽



Recipe:

● 1 ½ cups beans

● 1 cups corn

● 1 avocado

● ½ cup cherry tomatoes

● 4 green onions thinly chopped

● BrightFresh Micro Arugula

● 1 lemon/lime

● ⅓ cup olive oil

● 2 tbsp balsamic vinegar

● 1 red bell pepper

● salt + garlic powder


Instructions:⁠

1. Slice the cherry tomatoes in half

2. Cut the pepper and avocado

3. Mix together the beans, corn, avocado, tomatoes, green onion, BrightFresh Micro Arugula and pepper

4. Squeeze in your lemon and salt

5. Mix and enjoy!
