Taco Bento Box

Ingredients

For the Pico de Gallo:

●    1 ripe tomato, diced

●    ½ red onion, finely chopped

●    Juice of ½ lime

●    Pinch of salt

For the Box:

●    ½ cup corn (canned or thawed from frozen)

●    ½ cup black beans, rinsed and drained

●    BrightFresh® Micro Rainbow Mix

●    A handful of tortilla chips

●    ¼ cup shredded cheddar cheese

Instructions

  1. Make the Pico de Gallo: In a small bowl, combine the diced tomato, chopped red onion, lime juice, and a pinch of salt. Mix well and set aside.
  2. Assemble the     Box:
        In a bento-style lunch box or divided container, arrange the ingredients in rows or sections:

                     ○    Spoon the fresh pico de gallo into one row.

                     ○    Next to it, add a row of corn.

                     ○    Follow with a row of black beans.

                     ○    Then a row of BrightFresh® Micro Rainbow Mix.                      

                     ○    In a separate compartment, add the tortilla chips.

                     ○    In another compartment, place the shredded cheddar cheese.

  1. Serve:
        Keep chilled until ready to eat. Mix and match ingredients to create mini     taco bites, chip scoops, or layered spoonfuls. Add guac or salsa on the     side if you like!
