Sushi Waffles

Ingredients:

●    2 cups cooked sushi rice

●    2 avocados

●    1 cup sushi salmon

●    BrightFresh® Micro Arugula

●    Sesame seeds

Instructions:

  1. Grease your waffle maker/spray with oil and place a big spoonful of sushi rice
  2. Press down and let it cook until crispy (about 5 minutes - but can vary depending on the waffle maker)
  3. Remove from waffle maker
  4. Mash your avocados and season with salt and pepper
  5. Top the rice waffle with a layer of avocado
  6. Place BrightFresh® Micro Arugula on top of the mashed avocado
  7. Top with the salmon
  8. Sprinkle with sesame seeds & enjoy!
