Spinach, Goat Cheese, and Cranberry Salad

Ingredients

●    6 cups baby spinach (roughly an 8oz bag)

●    1 cup BrightFresh® Micro Arugula

●    ¼ cup goat cheese, crumbled

●    ½ cup dried cranberries

●    ½ cup chopped pecans

●    ⅛ cup olive oil

●    ¼ cup balsamic vinegar

●    1 tablespoon honey

●    Pinch of salt and pepper(optional)

Instructions

  1. Whisk together the oil, balsamic vinegar, honey, and salt and pepper to make the dressing
  2. Add the baby spinach and BrightFresh® Micro Arugula to a large salad bowl
  3. Toss gently with cranberries, goat cheese and pecans.
  4. Pour in the dressing then mix well and enjoy!
