Smashed Potato Salad

Ingredients:

Smashed potatoes -

●    2 lbs baby potatoes

●    2-3 tablespoons olive oil

●    Salt and pepper

 

Salad -

●    BrightFresh® Micro Radish Mix

●    1 medium cucumber chopped

●    ¾ cup Greek yogurt

●    3 tablespoons mayo

●    ½ lemon squeezed

●    2 tablespoons red wine vinegar

●    Salt

Instructions:

  1. Boil the potatoes for about 8-10 minutes or until fork tender
  2. Place them on a lined baking tray
  3. Smash them and spray/drizzle olive oil, salt and pepper
  4. Bake @425F for 45-50 minutes until crispy - flip halfway
  5. Transfer into a bowl and mix well with the rest of the ingredients
  6. Place in a serving bowl and enjoy!
