These smash burger tacos are a quick, low-cost dinner made with just a handful of ingredients. Seasoned ground beef is smashed into a flour tortilla and cooked until crispy, then topped with melty cheese, simple lemon garlic sauce, and classic burger fixings.

Ingredients

• 1 lb ground beef (80/20)

• Spices of choice (salt, pepper, garlic powder, etc.)

• 3 (6-inch) flour tortillas

• 3 slices cheese

• Chopped white onion

• Dill pickle chips

• BrightFresh® Microgreens Micro Medley

Simple Lemon Garlic Sauce

• ¼ cup mayo

• Juice of 1 lemon

• Salt, to taste

• Garlic powder, to taste

Instructions

  1. In a small bowl, whisk together mayo, lemon juice, salt, and garlic powder. Refrigerate until ready to use.
  2. Season the outside of the ground beef evenly with your spices of choice.
  3. Divide beef into 2½-oz balls.
  4. Heat a flat top or griddle on high heat and lightly spray with oil.
  5. Smash each beef ball directly onto a tortilla, pressing it flat so it sticks. Place beef side down onto the hot surface.
  6. Cook undisturbed for 3 to 5 minutes, until the beef develops a crispy, browned crust.
  7. Scrape and flip so the tortilla side cooks on the flat top. Cook about 2 minutes, until lightly crisp.
  8. Add cheese and allow it to melt.
  9. Remove from heat and top with lemon garlic sauce, chopped onion, pickle chips, and BrightFresh® Microgreens Supergreens Micro Medley.
  10. Fold, serve hot, and enjoy.
