Savory Carrot Muffins

The muffin your morning routine has been missing 🥕✨

 

Savory, hearty, and ready to grab all week. These carrot muffins are everything a grab-and-go breakfast should be, and finished with BrightFresh® Micro Beets for a pop of color and freshness that makes them look as good as they taste. Bake a batch on Sunday and you're sorted through Friday.

Ingredients:

●    2.5 cups grated carrots

●    2 tbsp olive oil

●    1.5 cups flour

●    1.5 cups milk

●    2 eggs

●    1 tbsp baking powder

●    seasonings

●    BrightFresh® Micro Beets

Instructions:

  1. Cook the grated carrots for 5-8 minutes with 2 tbsp olive oil until soft
  2. Mix the flour, seasonings & baking powder together
  3. Adding the eggs and milk and mix until combined
  4. Mix in the cooked carrots and BrightFresh® Micro Beets
  5. Scoop the mixture into muffin molds
  6. Bake @375F for around 30-35 minutes until done
  7. Pop out & enjoy!
