Green Goddess Bowl

This salad is guaranteed to make you feel like a goddess 🥗✨ This Green Goddess Bowl is complete with 4 different sources of protein, packed with fiber and full of nutritious goodness thanks to @BrightFreshmicrogreens Micro Broccoli  

Green Goddess Dressing

   •   1 cup plain Greek yogurt

   •   2 Tbsp freshly squeezed lemon juice

   •   2 Tbsp extra-virgin olive oil

   •   2 cups mixed fresh herbs (parsley, dill, basil, chives, cilantro, tarragon, or mint)

   •   1 garlic clove, roughly chopped

   •   1 Tbsp Worcestershire sauce

   •   1 tsp kosher salt

   •   ½ tsp ground black pepper

   •   ¼ tsp onion powder

Blend until smooth; store in fridge

Green Goddess Bowls (makes 4 bowls)

Ingredients:

   •   2 medium sweet potatoes, cut into cubes

    •   1 small red onion, cut into 1-inch wedges

   •   1 (15-oz) can chickpeas, rinsed and drained

   •   2 tbs avocado oil

   •   4 tsp ground chili powder

   •   2 tsp smoked paprika

   •   2 tsp garlic powder

   •   1 tsp kosher salt

   •   2 medium bunches lacinato kale or 1 large bunch curly kale

   •    1Tbsp olive oil

   •   1 lemon, juiced

   •   Bright Fresh Micro Broccoli

   •   2 cups cooked quinoa

   •   1 lbs chicken thighs

   •   1¼ cups finely sliced purple or green cabbage

   •   4 mini cucumbers, sliced or diced

   •   1 pint cherry tomatoes, halved

   •   Sriracha or hot sauce, to taste

   •   ½ cup crumbled feta

Instructions:

1.   Preheat the oven to 425 °F. Line a rimmed baking sheet with parchment paper. In a small bowl, mix together chili powder, smoked paprika, garlic powder, and salt.

2.   In a large bowl, toss sweet potatoes, red onion, and chickpeas with avocado oil and half of the seasoning blend. Spread into an even layer on the baking sheet. Roast 40–50 minutes, turning halfway, until sweet potatoes are tender and chickpeas are crisp.

3.   In the previously used bowl, add the chicken thighs and remaining seasoning blend. Transfer to the oven to bake for 30 minutes

4.   While roasting, thinly slice the kale. In a bowl, hand massage the kale with lemon juice and olive oil until it softens and then fold in BrightFresh® Micro Broccoli.

5.   Assemble each bowl: start with quinoa, then kale, roasted veggies + chickpeas, shredded chicken, cabbage, cucumbers, tomatoes.

6.   Drizzle with Green Goddess Dressing, add hot sauce if desired, and sprinkle feta.
