Goat Cheese and Maple Pecan Stuffed Dates

Ingredients

●    17 Medjool dates

●    4 oz goat cheese

●    ½ cup pecan halves

●    1 Tablespoon maple syrup

●    ⅛ teaspoon paprika

●    ⅛ teaspoon sea salt

●    BrightFresh® Micro Arugula (for garnish + a inside each date)

Instructions

  1. Preheat the oven to 400°F.
  2. Chop pecans and add to a small bowl with maple syrup and sea salt. Toss to coat, then spread on a parchment-lined baking sheet.
  3. Roast for 8-10 minutes, remove from the oven, and let cool.
  4. Slice each date in half and remove the pit.
  5. Stuff each date with goat cheese, add a pinch of micro arugula inside, then top with the maple-roasted pecans.
  6. Garnish with additional BrightFresh® Micro Arugula and serve immediately.
