Egg Stuffed Croissants

Those day-old croissants just became today's breakfast 🥐🍳 

 

No sad desk breakfast, no sad granola bar. Hollow out your leftover croissants, stuff them with sauteed peppers, onion, and a cheesy egg mixture loaded with BrightFresh® Micro Arugula, and let the air fryer handle the rest. Crispy outside, melty and savory inside. Nothing goes to waste and brunch is served.

Ingredients:

●    4 large croissants/croissant rolls

●    6 eggs

●    1 tbsp olive oil

●    ½ pepper chopped

●    ¼th onion chopped

●    ⅔ cup shredded cheese

●    BrightFresh Micro Arugala

●    (optional) parmesan for the top

●    Air fry @350f for 15-20 minutes

Instructions:

  1. Heat up a pan with oil and add in the cut peppers, onion and salt
  2. Let it cook until soft - stir occasionally
  3. In a bowl mix the eggs and BrightFresh Micro Arugala
  4. Add in the pepper-onion mixture
  5. Mix in the shredded cheese
  6. Cut the center of your croissants out to create a well
  7. Scoop the egg mixture inside
  8. Airfry @350F for 15 minutes
  9. (optional) Top with parmesan & enjoy!
