● 6 English muffins, split
● 6 large eggs
● ½ cup milk
● 1 cup BrightFresh® Micro Arugula
● Salt and pepper, to taste
● Spices of choice (such as garlic powder, onion powder, or paprika)
● Sliced cheese (any variety you like)
● Additional BrightFresh® Micro Arugula, optional for assembling
1. Preheat the oven to 350°F (175°C). Grease a rimmed baking tray or line it with parchment paper.
2. In a large bowl, whisk together the eggs, milk, salt, pepper, spices of choice, and BrightFresh® Micro Arugula until well combined.
3. Pour the egg mixture evenly onto the prepared baking tray, spreading it out into an even layer.
4. Bake for 10–12 minutes, or until the eggs are fully set.
5. Remove from the oven and let cool slightly, then cut the egg sheet into squares sized to fit the English muffins.
6. Assemble the sandwiches by placing an egg square on the bottom half of each English muffin. Top with a slice of cheese and additional BrightFresh® Micro Arugula, if desired, then close with the top half of the muffin.
7. Wrap individually and store in the freezer. When ready to eat, microwave or bake until heated through.
