● 8 large eggs
● 1 cup cottage cheese
● 1 cup BrightFresh® Micro Arugula
● 1 cup diced bell pepper (any color)
● Salt and pepper, to taste
● 1 teaspoon garlic powder
● 1½ teaspoons onion powder
● 1 teaspoon paprika
1. Preheat the oven to 350°F (175°C). Grease a muffin tin well or line with silicone baking cups.
2. In a large bowl, whisk together the eggs and cottage cheese until smooth.
3. Gently fold in the BrightFresh® Micro Arugula, diced bell pepper, garlic powder, onion powder, paprika, salt, and pepper.
4. Pour the mixture evenly into the muffin cups, filling each about ¾ full.
5. Bake for 20–22 minutes, or until the tops are set and lightly golden.
6. Let cool slightly before removing from the tin. Store in the refrigerator for up to 5 days or freeze for longer storage.
