Ingredients

• 5 large eggs
• ½ cup shredded cheese
• ½ cup BrightFresh® Micro Rainbow Mix, roughly chopped    
• Salt, to taste
• Seasonings of choice, to taste
• Cooking spray or oil, for the waffle iron
• Additional BrightFresh® Micro Rainbow Mix, for garnish

Instructions

1. Prepare the egg mixture: In a medium bowl, whisk the eggs until well beaten. Stir in the shredded cheese and chopped BrightFresh® Micro Rainbow Mix. Season with salt and desired seasonings.
2. Preheat the waffle iron: Preheat the waffle iron according to the manufacturer's instructions. Lightly grease with cooking spray or oil.
3. Cook the waffles: Pour enough egg mixture into the center of the waffle iron to cover the cooking surface without overflowing. Close the waffle iron and cook until the eggs are set and the waffle is lightly browned, approximately 3–5 minutes.
4. Serve: Carefully remove the waffle and transfer to a plate. Repeat with the remaining egg mixture. Top with additional BrightFresh® Micro Rainbow Mix and serve immediately.
