Ingredients

●    1 medium spaghetti squash

●    ½ cup pasta sauce

●    1 cup shredded mozzarella cheese

●    BrightFresh® Micro Broccoli

●    Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F and line a baking sheet. Cut the spaghetti squash in half lengthwise, remove the seeds, and place cut side down on the sheet. Bake about 45 minutes, until tender.
  2. Let cool slightly, then scrape the strands out with a fork and place in a bowl. Mix the strands with pasta sauce, salt, pepper, and a handful of BrightFresh® Micro Broccoli. Spoon back into the shells and top with mozzarella.
  3. Bake 7–9 minutes, until the cheese is melted and bubbly. Finish with an extra sprinkle of BrightFresh® Micro Broccoli as a fresh garnish and serve.
