● 4 russet potatoes, peeled and sliced into ¼-inch slices
● 1 yellow onion, sliced into rings
● 3 tablespoons coconut oil
● 3 tablespoons all-purpose flour
● ½ teaspoon kosher salt
● 2 cups whole milk
● 1½ cups shredded cheddar cheese
● Salt and pepper

1. Preheat oven to 400°F. Lightly spray an 8×8-inch casserole dish with nonstick spray
2. Using a mandolin/sharp knife, cut the potatoes and onion into thin slices
3. Arrange the potatoes and onions in the dish, alternating potato slices with onion rings
4. Sprinkle a generous handful of BrightFresh® Micro Rainbow Mix evenly over the top of the layered potatoes and onions
5. In a medium saucepan, melt the coconut oil over medium heat. Add the flour and salt; whisk constantly for 1 minute
6. Slowly whisk in the milk and cook until the mixture thickens
7. Add all the cheddar cheese at once and stir until melted and smooth
8. Pour the cheese sauce directly over the potatoes, onions, and BrightFresh® microgreens
9. Cover the dish with foil and bake for 85–90 minutes, or until potatoes are tender
10. Season with salt and pepper, and finish with a fresh sprinkle of BrightFresh® Micro Rainbow Mix for color and brightness.
