
Cheesy Mushroom Puff Pastry Cups
Ingredients
- 12 sheets puff pastry
- 2 tbsp olive oil
- 16 oz cremini mushrooms
- 1 medium yellow onion
- 3-4 tablespoons minced garlic
- Salt
- 12 oz shredded cheese
- BrightFresh® Micro Rainbow Mix
Instructions
- Preheat oven to 400°F and grease a muffin pan
- Preheat a large pan over medium-high heat and add the oil.
- Dice the onion and garlic; sauté until the onion is translucent.
- Dice the mushrooms and add them to the pan. Season with salt. Cook over medium-high heat until browned and softened.
- Drain any excess liquid and transfer the mushroom mixture to a mixing bowl.
- Let cool slightly, then mix in the cheese and a handful of BrightFresh® Micro Rainbow Mix.
- Cut the puff pastry sheets into squares
- Place each pastry square into a muffin cup to form a pastry “cup.”
- Fill each with about 1½ tablespoons of the mushroom-cheddar-microgreen mixture.
- Bake for 15–17 minutes, or until the pastry is golden brown.
- Remove from the oven and top with an extra sprinkle of Micro Rainbow Mix for freshness and color.
