Cheesy Mushroom Puff Pastry Cups

  1. Preheat oven to 400°F and grease a muffin pan
  2. Preheat a large pan over medium-high heat and add the oil.
  3. Dice the onion and garlic; sauté until the onion is translucent.
  4. Dice the mushrooms and add them to the pan. Season with salt. Cook over medium-high heat until browned and softened.
  5. Drain any excess liquid and transfer the mushroom mixture to a mixing bowl.
  6. Let cool slightly, then mix in the cheese and a handful of BrightFresh® Micro Rainbow Mix.
  7. Cut the puff pastry sheets into squares
  8. Place each pastry square into a muffin cup to form a pastry “cup.”
  9. Fill each with about 1½ tablespoons of the mushroom-cheddar-microgreen mixture.
  10. Bake for 15–17 minutes, or until the pastry is golden brown.
  11. Remove from the oven and top with an extra sprinkle of Micro Rainbow Mix for freshness and color.
