Cheese & Black Bean Quesadillas

Ingredients

●    2 medium flour tortillas

●    1 cup shredded mozzarella cheese

●    ½ cup fresh BrightFresh® Micro Broccoli

●    ½ cup canned black beans (drained and rinsed)

●    Spray oil

Instructions

  1. Lay one tortilla flat and sprinkle about ½ cup of shredded mozzarella over half of the tortilla.
  2. Add a handful of BrightFresh® Micro Broccoli, followed by a spoonful or two of black beans.
  3. Sprinkle a little more mozzarella on top for extra melt and flavor.
  4. Fold the tortilla in half to close. Lightly spray a skillet with oil and heat over medium.
  5. Place the folded quesadilla in the skillet. Cook for 2–3 minutes on one side until golden brown, then flip and cook the other side until golden and the cheese is melted.
  6. Remove from the skillet, let cool slightly, then cut in half. Serve warm and enjoy!
