Caprese Pesto Flatbreads

Ingredients:

●    2 flatbreads

●    2 tablespoons olive oil

●    ⅔ cup pesto

●    16 oz fresh mozzarella

●    1 cup halved cherry tomatoes

●    BrightFresh® Micro Arugula

Instructions:

  1. Drizzle olive oil on the flatbreads
  2. Slice your mozzarella and place on your flatbreads
  3. Spread your pesto around the mozzarella
  4. Top with the tomato halves and BrightFresh® Micro Arugula
  5. Bake @350F for 10-12 minutes
  6. Make your balsamic reduction by heating up balsamic vinegar and honey in a pot until combined
  7. Spoon the reduction over the flatbreads, slice and enjoy!
