Ingredients

●    1–2 bell peppers, sliced

●    2 tilapia filets, thawed

●    Salt and pepper

●    Avocado oil spray

●    6 extra-thin corn tortillas

●    Your favorite sauce

●    A handful BrightFresh® Micro Rainbow Mix

Instructions

  1. Cut up the peppers, spray with oil, season with salt and pepper, and air fry at 400°F until roasted and tender.
  2. Add in the tilapia and cook until the fish is done and flakes easily.
  3. Warm a tortilla, spread with your favorite sauce, add a handful of roasted peppers and cooked fish
  4. Top with BrightFresh® Micro Broccoli and Rainbow Mix. Enjoy!
