Green Pea Shoots are amazing for their bright green color, crunchy bite and watery burst of flavor. They go well with everything and many enjoy them raw as a snack. Here we chop them and toss with the steak bites, as well as garnish on top. You can add them to your favorite side, like we did with our mashers. Go a step further and create a bed of green goodness, and suddenly, your garlic bites morph into a steak salad!
Is your mouth watering yet? Let's get started with some upfront tips that promise success every time: Make sure your skillet is hot! It doesn't have to be an iron skillet but use one if you can. The trick is to NOT stir up the steak bites when you first drop them in your sizzling skillet - let a nice sear develop. Then, wait to add the garlic butter until the end; this way you won't burn the garlic and have to start all over (we've all been there, people!)
These bites are meant to be shared, so serve on a platter as an appetizer for four. Or get cozy with your loved one and feed each other individual morsels. They are that good and quite the tasty start to any dinner or family gathering. Either way, you'll all be going back for more (recipe can be doubled!)
Ingredients
2 tbsp olive oil
1 ½ lb. steak cut into bite size pieces, try Second City Prime Tenderloin Tails
2 tbsp butter unsalted
4 cloves garlic minced
¼ tsp red pepper flakes
1/2 cup Green Pea Shoots, chopped
Method:
Add the olive oil to a large skillet and heat it over high heat. Make sure the olive oil is hot.
Cut your steak into small, bite-sized pieces and season generously with the “Signature Rub", then add the steak pieces to it.
Cook for at least 2 minutes before stirring the steak pieces. You want to make sure you get a good sear on them.
Cut the Green Pea Shoots into ¼" pieces and stir-fry along with steak for 1-2 minutes.
Continue cooking for another 2 minutes until they're golden brown. If your skillet isn't big enough, you may need to do this in batches (especially if you double).
Transfer the steak bites to a plate and in the same skillet add the butter. Turn the heat down to a medium and after the butter has melted, add the garlic and red pepper flakes. Cook for about 30 seconds while stirring, just until the garlic becomes aromatic and starts to brown.
Pour the garlic butter over the steak bites and toss well.
Choose your side dish: we’ve chosen classic mashed potatoes.
Garnish mashed potatoes with the Green Pea Shoots. Salt & Pepper everything, to taste.
Plate up: Create a bed with the long strips of Green Pea Shoots, add steak bites and mashed potatoes and enjoy a romantic dinner with your loved one(s)!
