Get creative in the kitchen with this easy yet hearty and delicious Chicken Roast. 2 Red Fingerling Potatoes (KETO substitute: 1/2 cauliflower head)
3 brown Mushrooms
2 Green Bell Peppers
1 White Onion
1/8 cup Olive Oil
2 boneless, skinless Chicken Breasts (or Thighs, depending on personal preference)
6 whole cloves Garlic
Salt and Pepper, to taste
1-2 fresh Thyme sprigs
1 cup BrightFresh Micro Arugula Microgreens
1 pat of Butter
Preheat oven to 325 degrees.
Slice red fingerlings long-wise (do the same if substituting cauliflower) and dice mushrooms.
Thinly slice the green peppers, white onion and lemon.
Set all aside.
In a cruette or roasting pot, add olive oil.
On medium heat, add chicken breasts or thighs.
Add each ingredient while simmering on medium heat, starting with the potatoes (cauliflower), onions, 6 whole garlic cloves, salt and pepper. Stir well.
Continue simmering and add green bell peppers, mushrooms and lemon slices.
Top chicken with a pat of butter and thyme sprigs.
Cook for another 10 minutes. It's okay to cover, but keep heat low, as lid will increase moisture heat.
Remove from stove and bake in oven at 325 degrees for 20 minutes.
Remove from oven. Let stand 5 minutes. Finish with 1 cup BrightFresh Micro Arugula.
