One Pot Chicken Noodle Soup with Microgreens

Is there anything more lovely than a steeping bowl of homemade chicken noodle soup? We think not! Which is why we lovingly seasoned, chopped and prepared this recipe just for you! Now you can share the comfort and nutrition of this soup (meal!) with your family and friends.

Deciding which of our Microgreens goes into the pot was easy. We love the way our Micro Cilantro adds to the rich aroma being simmered. Its crisp, light taste blends perfectly, adding a needed contrast in texture. We also recommend adding a crispy bread (ours is chibata). Everyone loves to dip into soup, so adding bread makes this cool weather treat a full meal.

Another awesome thing about making One-Pot recipes is the "kitchen sink" philosophy...throw whatever you got into, lol. Or if you're rule follower, you can follow the directions to a 'T'. Either way, you'll wind up with the most satisfying and delicious soup.


The weather is reason enough to make this recipe, but truth is, the prep is so easy you can walk away, multi-task and come back to a feast! Plus, your whole house will smell like heaven (if heaven were a cozy cabin in the woods with a roaring fire, your fave slippers and a bowl of this soup!)

Meal Prep Note: This batch yields about 6 generous servings (as long as you don't keep the soup on heat for hours. If you do, the egg noodles will absorb the broth and your soup will quickly become a stew. Once again, if you're freezing meals for round two, what's the harm in putting two pots on the stove? Make your time count and be delicious doing it!


Lastly, we urge you to get crazy and chop/mince some Micro Cilantro as a garnish. This mincing will release wonderful flavors and aroma. It's the final perfect step, and now you are officially the Queen (or King) of Soup Making. Good job!


INGREDIENTS:

  • 1 tbsp avocado oil

  • 1/2 yellow onion, sliced

  • 1 teaspoon garlic, minced

  • 1 bay leaf

  • 4 stalks celery, sliced

  • 3 medium sized tri-color carrots, sliced

  • 6 cups chicken bone broth

  • 3 boneless, skinless chicken breasts, cubed raw

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon dried thyme

  • 1 teaspoon old bay seasoning or crushed red pepper flakes

  • 1/2 tsp turmeric

  • Salt and pepper to taste

  • 3 tbsp. Micro Cilantro, minced

  • 1/2 lb. egg noodles or gluten-free noodles or rice noodles

  • Lemon squeeze

  • BrightFresh Micro Cilantro, as garnish

METHOD:

  1. Over medium high heat in a 5 qt, dutch oven, saute onions, garlic and bay leaf until onions are soft

  2. Add vegetables and saute for 2 minutes

  3. Pour in chicken broth and add chicken cubes

  4. Add seasonings and bring to a boil

  5. Reduce heat to medium and add egg noodles

  6. Simmer for about 10 minutes or until noodles are al dente. Remove bay leaf

  7. Bowl up and serve hot sprinkled with Micro Cilantro and lemon juice
