BBQ Cauliflower Wings with Green Pea Shoots

Lately, our get-togethers with family and friends have looked a little different. But don't let that put the brakes on your home cooking. People will always be hungry! And when you plan your next socially-distanced celebration, make sure to include food that knocks the socks off your guests.

Start with this healthy and zingy appetizer. Made with nutritious Cauliflower and tasty, sugar-free sauces from True Made Foods, you have a vegan-version of BBQ wings without the guilt! We can't get enough of their sauces that are made from natural vegetable sugars and BBQ spices shared by the O.G. Pitmaster and co-founder himself, Ed Mitchell. With that kind of food-crafting, you know it's going to be amazing!

Next we add our newest member of the BrightFresh family - our Green Pea Shoots. These little greens pack a big pea punch and will delight you with their natural crunch and bright green color. That's because they've literally just sprung from the earth days before, picked just for you. You'll find they are a playful green that is so versatile - eat them raw like candy or popcorn, or blend them into salads, soups or as a garnish. And never, ever stop playing with your food!

  • Preheat oven to 450 degrees. Line a rimmed baking sheet with aluminum foil.

  • Carve your Cauli heads: start by cutting away leaves and stem. Then gently carve bite-sized florets from the head. Set aside in a large bowl.

  • In a medium mixing bowl, combine both sauces – BBQ and Veracha and whisk.

  • Pour sauce into bowl of florets and mix evenly, covering all parts of the cauliflower.

  • Arrange in a single layer on the rimmed baking sheet.

  • Bake for 20-25 minutes or until the florets start to get brown and crispy.

  • Evenly sprinkle ground pepper, fine sea salt.

  • Arrange on appetizer plate. Garnish with Green Pea Shoots. Or if you like, create a green bed of shoots and lay pieces of “cauliflower wings” on top.

Serves 4-6
